How to make it

  1. Mix the water and the active starter, then add the flour. Mix until no dry flour remains. Cover and leave for 30 minutes. The starter should be risen, full of bubbles and close to its peak.
  2. Add the salt and work it in with a wet hand, squeezing and folding the dough for 3–4 minutes. Leave for 30 minutes.

Adapted for the Thermomix TM6 and TM7; fermenting, folding and baking are done separately.

  • 350 g water
  • 110 g active sourdough starter, 100% hydration
  • 11 g salt

  • 20–30 g chilli crunch, mostly the solid part (optional)

How to make it

  1. Put the water and starter into the mixing bowl. Mix 20 sec / speed 3, without heating.
  2. Add the 500 g flour. Mix 30 sec / speed 4, then let the dough rest for 30 minutes.
  3. Add the salt and knead 2 min / Knead mode, without heating. Transfer the dough to a large bowl and leave for 30 minutes.
  4. Carry on by hand with the 4 sets of folds from the classic method. Add the cheddar, spring onions and chilli crunch during the third and fourth sets; do not chop them with the blades.
  5. Follow the same cues for fermenting, shaping and the rise in the fridge. Bake in the cast-iron pot in the oven, following the steps above. The Thermomix only makes the dough.
