How to make it
- The hard vegetables: Preheat the oven to 200°C, top and bottom heat (190°C fan). Peel the beetroot, potatoes and celeriac; cut the beetroot into 1.5 cm cubes and the potatoes and celeriac into pieces of about 2 cm. Pat them dry well.
- The hard vegetables: Put the beetroot, potatoes and celeriac into a large roasting tin in a single layer. Add 45 ml olive oil, the thyme, pepper and a little salt. Toss, keeping the beetroot to one side of the tin if you don't want it to colour the potatoes. Roast for 20 minutes.
- The peppers, onion and garlic: Cut the onion into quarters and the peppers into wide strips. If you are using apples, core them and cut them into quarters. Lightly crush the garlic. Add them to the tin, together with the optional apples, carefully turn the vegetables and roast for another 20–25 minutes, until tender and lightly caramelised. If the beetroot is still hard, roast for a few more minutes.
- If the vegetables are still firm, roast them for another 5–8 minutes. Add the feta, broken into pieces, on the plate after roasting, as shown in the photo; if you prefer it warm, put it in the tin for the last 5 minutes.
- The dressing: Mix the Dijon mustard, honey, lemon juice and 15 ml olive oil until emulsified. Taste before adding more salt.
- Serving: Take the tin out of the oven and drizzle the dressing over the vegetables just before serving. Serve warm, as a meat-free main course or as a side dish.
Thermomix adaptation TM6/TM7
TM6 and TM7 adaptation: the appliance makes the dressing; the vegetables are roasted in the oven.
Ingredients
- The vegetables and feta
- 400 g raw beetroot
- 400 g potatoes
- 250 g celeriac
- 200 g onion (about 2 medium onions)
- 300 g kapia (long sweet red) peppers or bell peppers (about 2)
- 1–2 tart apples (optional; shown in the photos)
- 160 g goat's feta
- 45 ml olive oil
- 2 garlic cloves (about 8 g)
- 1 tsp dried thyme
- The mustard and honey dressing
- 1 tsp Dijon mustard (about 5 g)
- 1 tsp honey (about 7 g)
- 15 ml lemon juice
- 15 ml olive oil
- Salt and pepper, to taste
How to make it
- Prepare the vegetables by cutting them by hand, as described in the classic method; do not chop them with the blades, so the pieces stay the right size for browning.
- Roast the beetroot, potatoes and celeriac for 20 minutes at 200°C, with 45 ml oil, thyme, pepper and a little salt. Add the peppers, onion, garlic and, if you like, the quartered apples; roast for another 20–25 minutes. Roast longer if needed, then scatter the feta over when serving or for the last 5 minutes of roasting.
- The dressing in the TM6/TM7: Put the Dijon mustard, honey, lemon juice and 15 ml olive oil into the mixing bowl. Mix 10 sec / speed 4, without heating.
- Pour the dressing over the vegetables once they are out of the oven. The Thermomix makes only the dressing; the roasting and caramelising happen in the oven.
