Thermomix adaptation TM6/TM7
Adapted for the Thermomix: the appliance mixes the ingredients; the folds, rising and baking happen outside it.
Ingredients
- 520 g bread flour
- 380 ml cold water
- 120 g active sourdough starter
- 13 g salt
How to make it
- Mix the cold water and active starter in the mixing bowl: 20 sec / speed 3, without heating.
- Add the flour and salt, then mix 30 sec / speed 4. Do not use Dough mode: this bread is made without kneading.
- Transfer the dough to a large bowl. Cover it and leave it for 30 minutes.
- Do the 6 sets of folds by hand, 40 minutes apart. After the last set, leave it for about 60 more minutes, then shape it.
- Leave it to rise in the fridge for 10–12 hours, then bake it in the oven following the classic steps: 25 min at 260°C with the lid on and 20–30 min at 200°C without the lid.
