How to make it

  1. Mix the soft lard with the sour cream and salt until smooth.
  2. Work in the flour gradually. Knead just until a smooth, soft dough comes together, without overworking it. If the sour cream is very runny, add only a little more flour, just enough so you can roll it out.
  3. Wrap the dough and chill it for at least 2 hours. Divide it into 4–5 pieces so it is easier to roll out.
  4. On a work surface very lightly dusted with flour, roll each piece out into a thin circle, about 2–3 mm thick. Cut the circle into 12–16 triangles.
  5. Put a little thick plum butter, plain or mixed with walnuts, at the base of each triangle. Roll up from the base to the tip and gently curve the ends.
  6. Place the crescents on a baking tray lined with baking paper and bake them in the oven preheated to 180°C, top and bottom heat, for about 20–25 minutes, until just lightly golden. Check the first tray from 18 minutes.
  7. While they are still slightly warm, roll them in vanilla icing sugar. Let them cool completely before storing.
Thermomix adaptation TM6

The TM6 mixes the dough; you shape the crescents by hand and bake them in the oven. Do not overmix the dough.

Ingredients

  • 500 g white flour
  • 250 g soft pork lard (not melted)
  • 250 g full-fat sour cream (20–25%)
  • 1 pinch of salt
  • 250–300 g thick plum butter (magiun)
  • 50 g ground walnuts (optional)
  • Vanilla icing sugar, to finish

How to make it

  1. Put the soft lard, sour cream and salt into the mixing bowl. Mix 15 sec / speed 3, without heating.
  2. Add the flour. Mix 15 sec / speed 4. Scrape the mixture down from the sides of the mixing bowl and, only if needed, mix for another 5–10 sec / speed 3.
  3. Turn the dough out onto the work surface, bring it together quickly with your hands without kneading for long, wrap it and chill it for at least 2 hours.
  4. If you are using walnuts, chop them in a clean, dry mixing bowl 4–5 sec / speed 5; mix them by hand into the thick plum butter.
  5. Roll the dough out into sheets about 2–3 mm thick, cut out triangles, fill them and roll them up as in the classic method.
  6. Bake at 180°C, top and bottom heat, for about 20–25 minutes, checking from 18 minutes. Dust the crescents with icing sugar while they are slightly warm.
