How to make it

  1. Mix the kefir, egg and oil. Separately, mix the flour with the bicarbonate of soda and salt.
  2. Work in the dry ingredients and knead briefly, until you have a soft, smooth dough. If it is sticky, sprinkle over a little more flour, without making it stiff.
  3. Cover and leave for 10 minutes at room temperature.
  4. Divide the dough into 10 pieces. Roll each piece out into a disc, put about 30 g of cold, well-drained filling in the centre and bring the edges up over it. Seal and flatten gently.
  5. Heat a heavy-based frying pan over a medium-low heat. Grease it very lightly with oil if needed. Cook the flatbreads for 3–4 minutes on each side, until golden and the dough is cooked through. Adjust the heat if they brown too quickly.
  6. Keep the flatbreads warm under a clean tea towel and serve them fresh.
