How to make it

  1. Mix the flour, sugar, vanilla sugar and salt.
  2. Gradually pour in the mineral water, whisking until there are no lumps left. Stir in the oil.
  3. Leave the batter to rest for 10 minutes. If it has thickened, gradually add another 30–50 ml mineral water. It should flow easily and spread in a thin layer.
  4. Heat a 22 cm non-stick frying pan over a medium to high heat. The batter contains oil, so grease the pan only if necessary.
  5. Pour in 50–60 ml of batter at a time and swirl the pan. Cook until the surface turns matt and the edges come away from the pan, about 60–90 seconds.
  6. Turn the crêpe over with a spatula and cook for another 30–45 seconds. Adjust the heat so the crêpes brown without burning.
  7. Stack the crêpes on top of each other and cover them so they stay soft. Serve with jam, fruit preserve or fresh fruit, as you like.

For savoury fillings, leave out the sugar and vanilla sugar. Add the extra water depending on how much the flour absorbs.

Thermomix adaptation TM6

  4. Cook the crêpes in a frying pan, following the steps of the classic method.
