How to make it
- Mix the well-drained cottage cheese with the egg and sugar. Break up any large lumps with a fork.
- Mix the flour with the baking powder and cinnamon and work them into the cheese. You get a thick dough that you can portion with a teaspoon. If the cheese was on the wet side, add more flour a teaspoon at a time.
- Heat a deep enough layer of oil in a small saucepan to about 170–175°C. Keep the heat moderate so the doughnuts cook through on the inside too.
- Using two teaspoons, shape small portions and lower them carefully into the oil. Fry in batches, without crowding the pan, for 3–4 minutes in total, turning them until evenly golden.
- Lift them out onto kitchen paper. Check the first doughnut: the inside must be cooked, with no raw dough.
- Dust lightly with icing sugar, to taste, and serve warm.
