How to make it

  1. Dissolve the sugar and fresh yeast in the 250 ml lukewarm water. If you use dried yeast, you can mix it straight into the flour.
  2. Add the flour, flavourings, citrus zest and salt. Gradually work in the oil and as much of the extra water as you need for a soft dough.
  3. Knead for 8–10 minutes, until elastic. Cover and leave for 60–90 minutes, until doubled in size.
  4. Roll it out on a lightly floured worktop into a sheet about 1 cm thick. Cut out 24 rounds and leave them for another 20–30 minutes.
  5. Fry in batches in oil at 170–175°C, about 1–2 minutes on each side. Keep the heat moderate and check that they are cooked through.
  6. Lift them out onto kitchen paper and dust with icing sugar to taste.
