How to make it

  1. Rinse the wheat in several changes of water and put it into a heavy-based pot with the water and salt.
  2. Bring to the boil, then turn down the heat. Simmer gently for 50–60 minutes, until the grains are soft. Stir from time to time and add a little hot water if the liquid runs low before the wheat is cooked.
  3. Add the sugar and cook for another 10–15 minutes, stirring often, until the mixture comes together. The wheat should stay moist and creamy; it firms up as it cools.
  4. Transfer it to two shallow dishes. Cover the surface with baking paper, let it cool and put it in the fridge within two hours at most. Leave it to chill overnight.
  5. Grind the walnuts, keeping a few larger pieces if you like the texture. Mix the cold wheat with the walnuts, vanilla sugar and lemon zest.
  6. Spread it on a platter, level it and decorate with icing sugar and walnuts, to taste. Keep it in the fridge until serving.
