How to make it

  1. Wash the beans and leave them to soak for 8–12 hours in the fridge. Drain them and put them on to boil in fresh water.
  2. Simmer over a low heat for 60–90 minutes, or until the beans are soft. Do not add the sauce before the beans are cooked.
  3. Separately, simmer the ribs in enough water to cover them until tender. Cut the meat into pieces and keep a little of the cooking liquid.
  4. Sauté the onion in the oil for 5 minutes. Add the flour and stir for a minute. Take the saucepan off the heat and add the paprika, then gradually pour in the milk, stirring.
  5. Add the drained beans, the meat and the bay leaves. Thin with 300–500 ml of the cooking liquid, depending on the consistency you want. Simmer gently for 10 minutes.
  6. Mix the sour cream with a little of the hot sauce, add it to the saucepan and heat gently for another 2–3 minutes. Season with salt and pepper, remove the bay leaves and add the herbs.

The cooking time depends on the variety and age of the beans. If you use yogurt instead of sour cream, the taste and the nutritional values change.
